Egg Roll in a Bowl | High Protein Easy Meal Prep

Need an easy high protein meal prep that will actually travel and reheat well? I've got you covered! Like all of my recipes, this is just a rough outline, feel free to modify as you wish and remember you can't go wrong when you are cooking, this is your blank canvas so don't be afraid to experiment and try new things with this as a base recipe! 


Ingredients: 

  • Ground turkey, beef, or pork

  • Jasmine rice

  • Shredded cabbage (I use pre-made veggie slaw to save time, just as good and half the fuss!) 

  • Sesame oil (if you don't have sesame oil you can use whatever oil you like) 

  • Spicy mayo (you can use premade or you can just mix together mayonnaise, sriracha and a touch of teriyaki sauce)

  • Teriyaki sauce - I love primal kitchen's no soy teriyaki, but any sauce you'd like is fine! 

  • Your favorite seasonings! I use garlic, onion, salt, pepper, just a dash of cayenne powder, and I love to top my bowl with black sesame. 

 

Instructions:

  1. Cook up a big batch of jasmine rice and set to the side (buy a rice cooker it will make your life easier!)

  2. Bring a large skillet to about medium heat on your stovetop, add a drop of sesame oil and begin to brown your meat. Season your meat with garlic, onion, salt, pepper, and if you enjoy a bit of kick you can add in a little cayenne pepper! 

  3. When your meat is browned, drain the excess liquid and return your skillet to the stove top and reduce or completely turn off the heat. 

  4. Add in your teriyaki sauce and your veggie slaw. The residual heat from the skillet should cook down the veggie slaw without making it "soggy".  (I like to be a bit heavy handed in this step because I like the sauce to give flavor to the rice in the next step.)

  5. Once your veggie slaw and meat are nice and mixed together, serve over rice and enjoy! 


Notes:

This recipe is great when you add a little extra! If you have some extra herbs laying around like basil or green onion feel free to chop them and add them into the mix. Always remember cooking is a form of creative expression so don't be afraid to make it your own!
