These loaded fries are an easy high protein meal that I never get sick of! This recipe has been an integral part of helping me reach my protein goal during my post partum journey, as well as being a recipe I turn to when I want an easy but nutritious meal.
You will need:
Sweet potatoes (you can do whatever potato you'd like but I prefer sweet potato fries)
Ground beef
Shredded cheese
Tomato
Pickles
Mayo
Mustard
Ketchup
Directions:
Preheat your oven to 375
Cut your sweet potatoes into long thin strips (if you're like me and inted to share with your little you may want to peel them to make them easier to swallow... where my fellow baby led weaning mamas at!?)
Line your cookie sheet with aluminum foil for easier clean up, then drizzle with avocado or olive oil.
Arrange your sweet potatoes onto your cookie sheet, a single layer will yield the best, crispiest results so be sure not to overcrowd, drizzle with oil and season with salt and pepper.
Pop your sweet potatoes into the oven for 15-20 min.
While your sweet potato fries are baking, brown your ground beef in a large skillet, season however you'd like! I prefer seasoning with salt, pepper, onion powder, garlic powder, chili powder, and a bit of paprika!
When meat is brown reduce heat and begin working on your toppings.
Pre chop your pickles and tomato
Make your sauce: I am a sauce girl, so for each person who will be eating this meal I like to make this ammount: 1tbsp of mayo, 1tbsp of ketchup, 1tbsp mustard!
Now that all of your prep is done, your sweet potato fries should be ready to go.
Layer fries, ground beef, cheese, chopped tomato, pickles, and drizzle sauce.
Enjoy! Please let me know if you try this recipe and what you think! :)
